This is where your drink experience begins. Vilòn’s cocktail lounge is where you sip perfectly-mixed cocktails by bar lady Magdalena Rodriguez and savour freshly-made finger food that promptly gets served directly from the kitchen. With a selection of 18 different cocktails, In Salotto is the perfect place to have an aperitivo or a light dinner. Among the forgotten classics definitely try the Hemingway Daiquiri, Bamboo Martini and the Old Pal. Cozy up in one of the corners, and exchange conversations with your friends as you relax to the eclectic sounds of Vilòn’s playlist, the Vilòn Charming Sound – ranging from lounge and world music, to jazz and ambient that perfectly sets the mood.

After drinks, it’s time to enter the gastronomic heart of the Vilòn experience: the Adelaide restaurant. You can dine in the trés chic indoor dining area or opt for a lunch or dinner al fresco in the stunning open-air courtyard.

Simplicity and passion reign in Adelaide’s kitchen where Chef Gabriele Muro brings the delicate flavors of the Island of Procida to Rome. Contemporary techniques yes, but with flavors that take you back to your childhood, to family, to the aromas of the sea. An A-lister is the Ajo, Ojo e Baccalà, Gragnano spaghetti with cod, bread and parsley powder. Not to mention the emblematic Il Vizio del Marinaio, a sea bass sandwich with escarole, sea lettuce and caviar. And for the meat lovers, the Porgi l’altra guancia, a stewed pork cheek on a cream of spicy carrots and hazelnuts from Viterbo is to die for. The wine selection couldn’t disappoint either, with top quality Italian classics divided into regions, as well as a champagne selection.

To end your meal in perfection, Chef Pâtissier Andrea De Benedetto swoops in with a delightful variety of desserts served in colorful Ginori Manufacture tableware in different fantasies. The most iconic dessert? The Mont Vilòn – a meringue ball filled with fresh caki sauce, vanilla mousse and maroon spaghetti that will make you come back for more.
