Eggs is a Modern Restaurant in Rome Dedicated to Eggs and the Art of Carbonara
Launched in March 2017 in the heart of Trastevere, Eggs is an egg and carbonara heaven, open for lunch, and dinner. It’s a small and contemporary bistrot with a rich and varied menu in which the egg is the star of the show. Along with organic hen eggs, there are also ostrich, quail, and sea urchin eggs plus caviar!
Eggs has introduced, uniquely in Italy, a Carbonara Menu. Dedicated to one of the most important dishes in traditional Roman cuisine, this menu offers the traditional version of the recipe along with ten other variants (including artichoke, truffle and red tuna).

The menu shows its experimental side with dishes such as poached eggs with chicory and bagna cauda and “Il gioco dell’ova,” a six step tasting course menu from quail eggs, to oysters right up to caviar. Despite these novelties, there are also classic dishes like stracciatella and zabaione. Don’t miss the meat or fish tartare and for dessert, the artisanally-prepared tiramisù. The wine list also provides a selection of organic and natural wines.
